Curious to see what all the fuss is about, I picked up a bag at Trader Joes. The seeds are a little pricey ($4.99/bag) but since they are loaded with omega-3 fatty acids, antioxidants, and protein, I figured they were worth the splurge.

The bag comes printed with a recipe for chia seed pudding, so I figured that was a good place to start. I modified it a little bit, and I have to sayI understand all the hype! When soaked in liquid, the seeds expand into tapioca-like pearls. Combined with almond milk and cocoa powder, they transform into a creamy pudding that is super healthy and delicious at the same time! This is my new weeknight dessert when I want something sweet without the guilt. It also tastes great with honey, cinnamon and vanilla instead of cocoa! Give it a try and let me know what you think!

tsp Nectresse sweetener (or sweetener of choice)

In a sealable container (i.e. Tupperware), combine ingredients and stir gently until evenly mixed. Cover and refrigerate for at least 2-3 hours (or overnight), until seeds have expanded and achieved a pudding-like consistency.
