Chia seeds--I keep hearing about them and all of their magical superfood qualities. I was skeptical at first, because all I think about when I hear the word Chia is Ch-Ch-Ch-Chia Pets

Bring back any memories?? Turns out this new hot superfood is really just the unsprouted form of your favorite childhood plant.

Curious to see what all the fuss is about, I picked up a bag at Trader Joes. The seeds are a little pricey ($4.99/bag) but since they are loaded with omega-3 fatty acids, antioxidants, and protein, I figured they were worth the splurge.forte love összetétel

The bag comes printed with a recipe for chia seed pudding, so I figured that was a good place to start. I modified it a little bit, and I have to sayI understand all the hype! When soaked in liquid, the seeds expand into tapioca-like pearls. Combined with almond milk and cocoa powder, they transform into a creamy pudding that is super healthy and delicious at the same time! This is my new weeknight dessert when I want something sweet without the guilt. It also tastes great with honey, cinnamon and vanilla instead of cocoa! In a sealable container (i.e. Tupperware), combine ingredients and stir gently until evenly mixed. Cover and refrigerate for at least 2-3 hours (or overnight), until seeds have expanded and achieved a pudding-like consistency.
